Description
Don Jorge Emilio Bravo is the owner of the Jardín de Linares farm in Santa Rosa (Risaralda department). The farm lies at the foot of the Nevado del Ruiz volcano, at an altitude of 1600-1800 meters. The air here warms up no higher than 22 ° C, so the harvest ripens later than in the rest of the coffee region, and harvesting begins only in November.
The harvested berries are depulpated. The coffee is then fermented for 12-16 hours, depending on the weather, and dried, usually in the sun. In rainy weather, the grain is dried mechanically, and this stage can take up to one and a half weeks. At the halling stage, the coffee is sorted: large grains are left with a size from the 14th screen and above, of which there should be more than 80% in the batch. Less dense grains, grains damaged by insects, and Quakers are rejected.
Castillo is a traditional Colombian variety with a recognizable taste: fruits, red berries and chocolate.
