Description
The farm covers 2.7 hectares and employs only 10 people: nine men and one woman. Due to the high altitude, the weather is cool here and there is exactly as much precipitation as is needed for the slow ripening of coffee berries. To keep the soil fertile, workers contribute manure, compost, coffee pulp, and siderates.
The harvested crop is sent to a processing station. There, the berries are washed, loaded into barrels, a little water is added, the air is pumped out and hermetically sealed for five days. Then the berries are extracted, sorted and laid out on African beds. They dry in the open sun for two to four weeks until the humidity drops to 12-13%. All this time, the berries are regularly mixed with a rake.: this way they dry evenly and do not get covered with mold.
